Born and raised in Madison, Matt has a deep personal connection to the Madison dining scene having worked at some of Madison’s best restaurants including Magnus, Harvest, Osteria Papavero and the last 8 years at Restaurant Muramoto. In 2015 he spent several months working in Japan expanding his knowledge of Japanese cuisine and deepening his love of ramen. His goal is to share his passion for traditional ramen with every customer.
Another Madison native, Francesca brings years of combined front of the house and kitchen experience to Morris Ramen. She was one of the youngest female executive chefs in Madison while at 43 North. Her resume also includes some of Madison’s premier restaurants—Magnus, Graze, and Restaurant Muramoto. While visiting her husband Matt Morris in Japan, she learned to love and appreciate the spirit of ramen — more than just the flavors — the devotion to guests and time-honored cooking techniques.
The man behind Restaurant Muramoto Downtown, Sushi Muramoto Hilldale, 43 North, The Haze and Kushi Bar Muramoto, helps to bring traditional ramen to Madison.
